Our smoked cheese “Sachsenrauch” is a smoked Gouda cheese that has been processed by hand and cold-smoked in a smoking oven on beech wood. If desired, spices or herbs can also be added to the cheese before smoking. Smoking gives it a particularly spicy taste and smoky aroma. The color and consistency of the outer layer also changes, becoming somewhat firmer and dark brown. It is also possible to grate the cheese.
